The Chart of Accounts (Kontenplan) determines which general ledger accounts a payroll starts with - selected per payroll via its accountingData regulation. See Support for how to set it up, including postings.

Important: unlike other regulations, a Chart of Accounts is just a Client Lookup you maintain yourself - see Regulations on the Payroll page for how that differs from the rest. Mapping individual wage types to accounts from it is a separate step, done via WageType-Accounting-Allocation.
